Fattah is one of the signature dishes in Arabian cuisine, but every country has their own take on the Fattah dish.
The most popular is chickpea Fattah, but there is also eggplant Fattah, chicken Fattah, Shawerma Fattah, there are other types but they vary greatly. They all have one ingredient in common: crispy toasted pita bread.
Today I wanted to teach Emily chicken Fattah in a simple and easy way, but I had to substitute the toasted bread with rice, as I wanted to teach her how to be creative in re-inventing dishes by adding new ingredients.
She started teaching her friends and she excelled until she surpassed me.
